Ingredients

  • 1-1/2 cup Ground Turkey Meat (certified organic)
  • 1/4 cup uncooked Quinoa
  • 1/2 cup water
  • 2 teaspoons Olive oil
  • 1/2 cup white onion, finely diced
  • 1/2 cup red bell pepper, finely diced
  • 1/2 cup carrot, shredded
  • 1 clove garlic, minced
  • 1/2 cup fresh parsley, chopped (or 1 tablespoon dry)
  • 2 tablespoons fresh thyme
  • 1/4 cup tomato paste
  • 2 tablespoons dijon mustard
  • 1-2 eggs
  • pinch sea salt and fresh cracked pepper (about 1/4 teaspoon Or less)
  • 2 tablespoons parmesan cheese (optional)
  • Ketchup

Confetti Meatloaf

This recipe literally converted a meatloaf hater into a meatloaf lover! Jack had a fun time helping to make this recipe and can't wait to try it with his mom soon. It is tender, moist and irresistible.

Make It:

1. Pre-heat your oven to 375 degrees.

2.
In a small saucepan, cook 1/4 cup of quinoa in 1/2 cup of water.

3.
Bring the quinoa and water to a boil and reduce to a simmer for about 12 minutes. Remove from the heat and set aside.

Wash and pat dry veggies and fresh herbs. Finely dice your onion, bell pepper and shred the carrots.

Heat a saute pan over medium and drizzle with olive oil. Add diced/shredded veggies and saute until tender (about 4-5 minutes). Remove from heat and let cool for a few minutes.

In the mean time, place your turkey meat in a large bowl and begin adding remaining ingredients, parsley through parmesan cheese.

Once the veggies and quinoa have cooled (this can be done ahead of time) add them to the meat mixture. Using a fork, incorporate all the ingredients with the turkey meat. I almost use a scraping motion to flake apart the meat and incorporate all the ingredients, which helps the meat stay tender.

10.
Form meatloaf into appropriate sized portions (I scoop out the meat so it is about the size of the palm of my hand to keep portion size down). Top with a squirt of ketchup to add a little moisture and sweetness and bake in a 375 degree pre-heated oven for 30-35 minutes (depending on the size of your loaves).

Clean it:

Reduce the amount of red meat you consume by changing ordinary red-meat recipes to leaner ground turkey or chicken.

Green it:

If you can, try to buy organic, free range ground turkey meat for your family.

Make it Fun:

Give your recipes fun names that kids might be attracted to like Confetti Meatloaf, or have them come up with a silly name for the recipe... When they are engaged in the process, they will be proud of the outcome and of course eat whatever it is!
