Ingredients
- 1 cup Organic Baby Spinach (tightly packed)
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon garlic, chopped
- 1/2 teaspoon salt
- 1-1/2 teaspoons lemon juice
- 3/4 cup organic plain yogurt
- 2 tablespoons extra virgin olive oil
Organic Spinach Yogurt Dip
Kids love to dip things, and a platter of assorted vegetables served with a tasty dip can keep them happily munching for a long time, eating tons of vitamins, minerals and healthy fiber.

Make It:
1. Place all ingredients in the bowl of a food processor and blend until smooth.
2. Serve the dip with an assortment of different color vegetables cut in a variety of shapes for children to arrange on a platter.
3. Cut carrots and cucumbers into sticks, circles and half moons; peppers of different colors into strips and squares; buy different types of cherry tomatoes - anything that looks good at the market.
Clean It:
Choose organic spinach to avoid the pesticide residues often found on conventional spinach (it's #14 on the Environmental Working Group's Shopper's Guide to Pesticides in Produce). Buy prewashed spinach to avoid the hassle of cleaning all the sand and grit from the leaves yourself.
Green It:
Use a reusable shopping bag to bring your produce home from the store -- keep a few bags in your car so they're always ready when you are.
Make It Fun:
My kids grew up gardening, and nothing tastes better than vegetables you grew yourself. Even one cherry tomato plant in a pot on your deck can get kids interested in eating more produce.
